La Crémaillère Dinner Preview

On Friday evening, March 22nd, we will once again present a Winemaker's Dinner at La Crémaillère restaurant in Bedford, NY. 

La Crémaillère's proprietor Robert Meyzen and his staff have been working diligently along with VDLT's Michael Kimelman and myself to come up with a wine pairing dinner that will astonish our guests with superb cuisine and the great wines of Domaine Drouhin-Laroze. We are honored to have the Domaine's owner/winemaker Philippe and his lovely wife Christine joining us for this event. All wines will be from the great 2009 or 2010 vintage. Because we worked (or should I say, enjoyed!) so hard tasting wine to come up with the perfect wine pairing dinner, I thought I would arouse your appetite with a preview.

- Reception -

As people gather, we will be greeted with a glass of 2009 Laroze Rosé with Hors D'oeuvres. As many of you may know, dry rosé is one of the fastest growing categories in the American wine market. Many retailers I know have tripled their selection of rosé in the past few years and springtime is the best time to enjoy these wines. This rosé is very special because it is 100% Pinot Noir from some of Burgundy's top vineyards.  Philippe makes a very small amount of this wine and only on certain vintages, not to sell, but to drink with friends. No doubt a special treat to taste.

- First Course -

We will then sit down for our first course of "Chaud/Froid” of Sea Scallops with Micro Greens and a Warm Crayfish Vinaigrette. This seafood course will be paired with VDLT's private label 2010 Chablis "Vaulorent,"  a single vineyard Premier Cru Chablis from the great 2010 vintage. On the nose, there are aromas of granny smith and green apples, citrus, limestone and wet rock. Very dry in the finish with a bright acidity that cries out for this scallop dish.

- Second Course -

Roasted Loin of Lamb, Ratatouille with a Green Olive Sauce paired with 2009 Drouhin-Laroze Chapelle-Chambertin Grand Cru. Traditionally, lamb is paired with full-bodied reds like Bordeaux or a Napa Valley Cabernet, but we strongly feel that this structured Grand Cru Burgundy from the powerful 2009 vintage will be superb! Beautiful red cherry aromas and flavors, as well as strawberry, blackcurrant and  gooseberry.  These flavors in conjunction with the wine's structure will bring out the best of both lamb and wine.

- Third Course -

Roasted Squab, Sautéed Foie Gras, Fresh English Peas with a Black Truffle Sauce. With this course, we are very happy to serve the 2010 Drouhin-Laroze Chambolle-Musigny. We have chosen this wine because it shows the gracefulness for which Chambolle-Musigny is known, yet it presents rich black cherry and dark berry fruit with complex notes of sandalwood, plums and spice. Fragrant and complex, it lines the palate with silk and lace. Its delicate and fleshy texture in no way detracts from its solid and durable structure. These deeper fruit flavors along with the wines texture will pair well with this richly flavored dish.

- Fourth Course -

Assortment of Fromages. For this course, we have hand-selected an assortment of artisan cheeses, some from Burgundy itself and others that will pair well with red Burgundy. For the last wine of the night how can we not serve another Grand Cru Red Burgundy! The wine we chose is the 2009 Drouhin-Laroze Latriciиres-Chambertin. The Latricières is a Grand Cru that has the acidity to handle the cheeses along with flavors and aromas of violet, moss, red liquorish, underbrush and earth. I cannot wait to taste this wine with these cheeses.

- Dessert Course -

We will conclude the evening with Coffee Soufflé Glacé, Chocolate Cookie Crust, Café, Thé et Petits Fours. Hope to see you on the 22nd!!!

The Wine Philosopher’s Review

This past Thursday night, VDLT in conjunction with La Crémaillère restaurant in Bedford, NY, put together a wine dinner that was so fabulous, I am compelled to share it with those that could not make it and reminisce with those that did attend.

Before sitting down for the first course, we gathered together, sipping VDLT's Private Label Rosé Champagne, Brut Elegance as servers appeared with trays of Hors d'oeuvres.

This champagne is a blend of Chardonnay and Pinot Noir all grown in Grand Cru vineyards around the village of Boissy-le-Repos.  

Maine Lobster, Gaufrette Potato, Coulis of Fennel
Châteauneuf-du-Pape Blanc 2011 – Château de la Font du Loup

The first course of Maine Lobster worked perfectly with Château de la Font du Loup's 2011 Châteauneuf-du-Pape Blanc. The richness of the lobster and the complexity of the gaufrette potato and coulis of fennel was highlighted and balanced by this amazing white wine.

White Chateauneuf-du-Pape is somewhat of a rarity in the world of fine wine because so little is made. Many of these wines are full bodied for a white wine with bold, sometimes tart flavors including apricot, honeysuckle, and herbs.  I find Château de la Font du Loup's wine to be cleaner and crisper in style and I personally prefer it over ones made by some of the Rhone's most famous producers. The 2011 presented floral aromas and flavors of white fruit, citrus, and almonds. In style, it carries itself much like a good white Burgundy.

The second course intrigued me the most, a white fish served with a young, fuller bodied red wine; how can this work? Well let me tell you, not only did it work, it turned out to be my favorite course of the evening. First of all, the halibut itself was top notch, almost sweet, and was cooked perfectly. I happily stand corrected twice, because not only did I think a red Châteauneuf would not work with this dish, I also thought that the braised cabbage and carrots (two fuller flavored veggies) with the Madagascar vanilla sauce would be too strong and slightly distract from the halibut. Well wrong again, the sauce and veggies actually highlighted the halibut, adding complexity to the dish, and was one of the reasons it worked so well with the wine.

The 2010 Châteauneuf-du-Pape is an excellent wine, a baby now that will reward time in the cellar. On the other hand, because of its youth, it has a fresh, crisp acidity with bright berry-like fruit that popped on the palate. One taste of this wine and I realized why Anne-Charlotte (winemaker) and Robert Meyzen (owner of La Crémaillère) chose it for the halibut. Genius!

While still reeling from the halibut, out comes the 2009 Châteauneuf-du-Pape with the lamb. 2009 was a vintage that produced somewhat bigger wines than the classic 2010 vintage. This vintage's style, in conjunction with having an extra year in the bottle, presented us with a broader, deeper wine with more grip. This was welcomed for a flavorful meat like lamb. There were plenty of positive comments at my table when it came to this course. The herb goat cheese, mashed potatoes, and green olive red wine reduction complimented the lamb and the wine. 

Because 2009 produced wines with plenty of body and alcohol, some Châteauneufs from this vintage are a bit too big for my taste, but because Château de la Font du Loup's vineyards face east and north instead of south like many other vineyards, its wines are more graceful and elegant in style. This elegant style combined with the big 2009 vintage resulted in a wine of great balance. I found it to show minerals, some smokey bacon, black cherry, and floral perfume. Fleshy with soft, ripe tannins that lead into an integrated and long finish.

Châteauneuf-du-Pape 2004 – Château de la Font du Loup

Next came the trio of cheeses with the 2004 Château de la Font du Loup.  2004 was a vintage that produced age-worthy wines and at 8 years old, we tasted a wine that has entered its prime, being rich and firm, yet smooth and coating on the palate. Deep in color with an expansive mouth feel revealing spice box, cedar, pepper, and kirsch liqueur notes. A well-integrated wine that handled the cheese course so well.  Bravo!! 

Dessert

Next came a superb Grand Marnier Soufflé  and Thé, et Petits Fours served with coffee. Many of you know how difficult it is to make a good soufflé, well now try to do this for 40-plus people! At this point, I'm sure you are not surprised when I say that La Crémaillère aced this soufflé. It was like eating a sweet cloud, fluffy and light while at the same time tantalizing my palate with the petits fours and coffee.

The cuisine of  La Crémaillère and the wines of Château de la Font du Loup made this evening a culinary dream come true.

Last Night Was Enchanted

Last night was truly an enchanted evening at La Crémaillère Restaurant. Voix de la Terre extends our thanks to our featured guest Anne-Charlotte Mélia-Bachas, owner of Château de la Font du Loup, for the presentation of her Châteauneuf-du-Pape wine. We also thank Robert, the chef, and the entire staff at La Crémaillère Restaurant for our delicious and delightful dinner.

Opportunity Knocks Twice

If you were one of the poor souls that watched Mark Sanchez toss the ball and the game to Houston instead of attending the VDLT tasting dinner with Burghound at Vic & Anthony's, we have good news. No, the Jets still lost but you can have a second chance to enjoy the fabulous wine you missed on October 8th.

The red wines served at the dinner were lights-out good. Burghound loved them all and, more importantly, so did the 60 folks that filled Vic & Anthony's. Due to the keen interest, we have decided to create a special kit called the "Burghound" which is comprised of the four wonderful red Burgundys served at our dinner on October 8. This kit is now on the website and costs $248 (a bargain price) and comes with 5 raffle tickets. Who knows?
